INSTRUCTIONS
In a large mixing bowl, combine all of the ingredients (except for the Melina's Green Gold EVOO) well. Once the mixture has consistency, refrigerate in the mixing bowl for about 20 minutes.

Line a baking tray with a sheet of parchment paper and using a spoon or a 1 oz. ice cream scoop, start to scoop and roll up the meatballs into about 1.5-2" balls. The mixture should make roughly 16 meatballs. Once all the meatballs are rolled on the baking tray, transfer back to the fridge to refrigerate for another 20 minutes so the flavors really marry together.

Add the Melina's Green Gold EVOO to a large pan on the stove over medium-high heat and sauté the meatballs on each side for about 30-45 seconds or until golden brown. Transfer the meatballs back to the baking tray once browned and bake the meatballs in the oven at 400 degrees for about 15 minutes to ensure they are cooked through.

Serve over a bed of angel hair pasta or simply with your favorite tomato based sauce for a delicious meal or appetizer!
